It looks like Grand Theft Auto 5 is once again departing Xbox Game Pass as it has joined the "Leaving soon" tab.
Every game in that section of the service has at least two weeks left before it's no longer available. With that, you have until early August at the latest to play through it if you haven't already. Otherwise, you'll have to pay up to get it. It's possible that Rockstar and Microsoft have moved it off Xbox Game Pass to avoid people getting a free next-gen upgrade when the game re-launches in November. It could be a little while until it comes back. For context, it resurfaced in April of this year meaning that it has been available for four months.

At any rate – as of writing this – it is discounted in the Xbox Summer Sale. It has dropped from $29.99 to $14.99. Red Dead Online is also on sale from $19.99 to $9.99 while Red Dead Redemption 2 itself has been reduced from $59.99 to $23.99. Only Online is available in Game Pass for free, though.
With the sale, you can play GTA5 on Game Pass while there's time left to trial it out. If you like it, you can pick it up and it'll already be installed and ready to go.
Alternatively, you can just leave it until it inevitably rejoins the service. After all, Rockstar's companion, Red Dead Online, is still available and hasn't yet joined the Leaving soon portion of Xbox Game Pass.
Also leaving Xbox Game Pass are It Lurks Below, The Tourist, and UnderMine. Those depart on August 1. However, Omno, The Ascent, Hades, Psychonauts 2, Lemnis Gate, Age of Empires 4, and Forza Horizon 5 are just around the corner.
