Here comes the vault.
Publisher and developer Bungie has pulled back the veil on Destiny 2's Destiny Content Vault (DCV), and according them it will allow Bungie to "add new content, bring back some of Destiny’s greatest hits from the past, and support Destiny 2 for years to come."
Since the DCV was announced in June, Bungie has noted that there has been a lot of programs for their newest initiative. However, most of the questions can be answered by this: that "When a destination goes into the DCV, so too do its PvE activities and associated rewards." That doesn't answer every question though, so here's what's going to be going into the vault on November 10:

Of course this is all well and good, but what exactly happens when a place is Vaulted? Well, when a destination enters the DCV, its PvE content is no longer available, so anything you can think of (such as Strikes, Raids, and Dungeons) can no longer be played. For Gambit (which is getting reworked more like Gambit Prime), and Crucible, they will be taking more of a 'best of' approach, rather than vaulting all the maps.
For newcomers to the game, there will be a "new, expanded Guardian origin story on the Cosmodrome that will launch alongside Year 4", as some Year 1 destinations are joining the DCV.
If you also want to complete Exotic Quests such as Sturm, MIDA Multi-tool, Rat King, Legend of Acrius, Sleeper Simulant, Polaris Lance, Worldline Zero, Ace of Spades, The Last Word, Le Monarque, Jotunn, Izanagi's Burden, Thorn, Lumina, Truth, and Bad Juji, (some of which were shown above), in their original form, then you'll have to finish them in time. If you don't finish (the the Vaulted quests) fear not, as any Exotic "tied to a quest that has been Vaulted (like those listed above) will now become available through a new Memorial kiosk situated among the Vault kiosks in the Tower." So try and do them, but if you don't finish them in time it's not the biggest deal.
